Ingredients
For the sausage and vegetables:
• Pork sausages – 6–8 large (≈ 700 g / 1.5 lb)
• Olive oil – 1½ tbsp / 22 ml
• Red bell pepper – 1 large, sliced
• Yellow bell pepper – 1 large, sliced
• Green bell pepper – 1 large, sliced
• Red onion – 1 large, sliced thickly
• Pineapple chunks (fresh or canned, drained) – 1½ cups / 200 g
• Salt – ½ tsp / 3 g
• Black pepper – ¼ tsp / 0.8 g
For the sweet chili glaze:
• Sweet chili sauce – ½ cup / 120 ml
• Soy sauce – 1 tbsp / 15 ml
• Honey – 1 tbsp / 15 ml
• Rice vinegar or apple cider vinegar – 1 tbsp / 15 ml
• Garlic – 2 cloves, minced (≈ 2 tsp / 6 g)
• Ginger (optional, finely grated) – ½ tsp / 1 g
• Cornflour/cornstarch – 1 tbsp – 2 tbsp water - slurry
To finish:
• Fresh coriander or parsley – 1 tbsp chopped (≈ 3 g)
• Optional: sliced chili or spring onions for garnish

Preheat oven to 200°C (400°F).
Sausages on top of the vegetables. roast uncovered for 25 minutes,
Return to the oven for another 20–25 minutes or even longer.
