BEEF KARAHI KABAB
Ingredients
Beef mince ½ kg
Onion 2
Tomato 3
Green chili 3
Ginger garlic paste 1 tbsp
Fresh coriander as required
Mint as required
Capsicum red yellow green as required
Egg 1
Salt 1 tsp
Turmeric ½ tsp
Cumin 1 tsp
Dry coriander 1 tsp
Ground garam masala ½ tsp
Lemon juice 1 lemon
Oil 1 cup
Method
In a bowl mix beef mince salt chili turmeric cumin dry coriander and ground garam masala. Add finely chopped onion tomato and vegetables. Add egg and mix well then shape into small round patties and shallow fry.
For masala heat oil in a pan and brown the onion. Add ginger garlic paste and sauté. Then add tomato and all spices and cook well. Add the prepared patties and leave on low flame for 10 min. Finally garnish with fresh coriander and green chili before serving.
KASHMIRI STYLE FIRNI
Ingredients
Semolina 250 grams
Milk 1 liter
Sugar 1 cup
Cardamom 4–5
Poppy seeds ½ tsp
Saffron as required
Dry fruits as required
Method
Pour milk into a pan. Add semolina crushed dry fruits and cardamom. Mix in a little saffron and stir well. Cook on medium flame while stirring continuously for 10–15 min until thick. Add sugar and cook for a few more minutes. Garnish with poppy seeds and serve.
