At a time when bubbly was overly sweet, her bold gamble—delaying harvest and risking the crop—forever changed how the world enjoys Champagne. Today, over 95% of Champagnes sold are dry because of her.
Then, witness how World War I devastated Reims, Champagne’s capital. Daily bombings forced citizens underground into chalk cellars, and by war’s end, 98% of the city was destroyed. Just as the region began to recover, Prohibition** struck—banning U.S. imports for 14 years and nearly collapsing the industry again.
