This is yummy medical medium recipe we've enjoyed on several occasions! Getting used to our new stove here and this round didn't come out visually perfectly, but that's all good lol. We ate them all anyhow and they were very good!! Easy to make and fun to learn new ways of cooking, while using beautiful ingredients and better cooking practices. In this instance - no corn, no gluten, and the idea of using no oil to cook these arepas on the stove.

Ingredients:
2 cups cassava flour
2/3 cup almond flour
2 tsp sea salt
2 cups unsweetened almond or light coconut milk* (see below)
1-2 tbsp coconut oil or avocado oil for frying (optional)
Directions:
Combine the cassava flour, almond flour, and sea salt in a medium-sized bowl. Whisk to combine.
Add the unsweetened almond milk to dry ingredients. Start by stirring the mixture with a spatula and then knead with your hands until you get a smooth, moist dough that can easily be formed into balls. Add more milk as needed.
Place a large non-stick ceramic skillet on medium heat and add the oil (if using). Once hot, scoop out about 1/3 cup of the dough and flatten into a disc that’s about 4-inches in diameter and cook for a few minutes on either side, until lightly browned. Remove and set aside to cool.
*Try out our almond mylk recipe - always a winner! Can also interchange other nuts for the same effect ie cashew, brazil, hazelnut, etc.:
