This dessert is going super viral in Korea right now. Literally, Everyone seems to be looking for it! 😆
The chewy chocolate marshmallow on the outside and the crunchy, nutty pistachio kataifi filling create an amazing texture contrast.
You get different textures in every bite, and the flavors are perfectly balanced. 🤤
I just had to develop my own version, and I’m so excited to share this recipe with you all.

Dubai Chewy Cookie Recipe
🌟 Pistachio paste
Pistachios 180 g
Most store-bought pistachio pastes or creams have a crazy amount of sugar. And the 100% pistachio ones are way too expensive. So I bought pistachios from Costco and made my own pistachio paste. It’s really nutty and delicious!
Since you can lose some while blending, grind a little more than 150 g
Measure out 150 g of pistachio paste for the recipe.
🌟 Toasted kataifi
Kataifi 150 g
Unsalted butter 50 g
After toasting, you’ll end up with about 150 g
🌟 Filling Mix
Toasted Kataifi 150g
White chocolate 50 g
Pistachio paste 150 g
Pinch of salt
Divide into 8 portions, about 42–43 g each
🌟 Marshmallow Base
Marshmallow 150 g
Unsalted butter 25 g
Cocoa powder 20 g
Milk powder (skim milk powder) 8 g
Divide into 8 portions, about 22–23 g each
If you use whole milk powder, use 5 g
If you don’t have any milk powder, you can skip it
📣 Dubai Chewy Cookies can be stored in the refrigerator for about 1 week.
Before eating, microwave for 5–10 seconds or let them thaw naturally to enjoy both the chewy and crunchy textures. I personally loved them even when eaten cold 😆
