Hara Bhara Kabab is a popular, vegetarian Indian snack. It gets its vibrant green color (Hara Bhara means 'green and lush') and freshness from spinach, peas, and coriander.
Here is a simple and delicious recipe for making these healthy and flavorful kababs.
1 tsp Garam masala
1 tsp Cumin powder
1/2 tsp Coriander powder
1 tsp Ginger, garlic paste
1/2 tsp Red chilli powder
1 tsp salt
Chopped green chili
1 cup Green Peas
1 cup Spinach leaves
1 finely chopped Capsicum
3 chopped Boiled potato
1/2 cup Coriander leaves
1/4 cup Onion
finely chopped
1 cup bread crumbs
3 tsp corn flour
Prepare the Green Base
1. Blanch Spinach : Bring about 2 cups of water to a boil. Add the spinach Boil for only 2 minutes.
drain the spinach and blend it well.
2. Blend the Green peas in a grinder or food processor into a coarse, slightly lumpy paste. Do not make a smooth puree.
3. In a pan hot oil add onions , Add the ginger-garlic paste, chopped capsicum, add green peas paste green chilies all the spice powders: Garam Masala, Cumin Powder, coriander powder ,red chilli powder and Salt. saute well and transfer to bowl
4. In a bowl add spinach paste, bread crumbs, bolied potatoes , add chopped coriander leaves ans corn flour
5. Mix everything thoroughly using your hands until you have a firm, non-sticky dough. If the mixture feels too loose, add 1-2 more tablespoons breadcrumbs.
6. Divide the mixture into equal portions. Lightly grease your palms and roll each portion into a smooth ball, then gently flatten it into a thick patty (kabab shape). Press one cashew half gently into the center of each kabab for garnish.
7. Heat 2-3 tablespoons of oil in a non-stick pan over medium heat. Place the kababs and cook them until they are golden brown and crisp on both sides (about 3-4 minutes per side).
8. Serve the Hara Bhara Kababs hot with fresh Coriander Chutney or tamarind chutney.
