Mini Honey-Chia Flatbreads
These mini flatbreads are a versatile, nutrient-boosted twist on a classic staple. The addition of honey provides a soft crumb and golden finish, while lemon juice acts as a natural dough conditioner. The chia seeds offer a delightful "pop" in every bite and a boost of omega-3s.
Ingredients
• White All-Purpose Flour: 2 cups (plus extra for dusting)
• Warm Water: ¾ cup (approx. 105°F–110°F)
• Active Dry Yeast: 1 teaspoon
• Honey: 1 tablespoon
• Salt: ½ teaspoon
• Lemon Juice: 1 teaspoon
• Chia Seeds: 2 tablespoons
Instructions
1. Activate the Yeast
In a small bowl, combine the warm water, honey, and lemon juice. Stir until the honey is dissolved. Sprinkle the yeast over the surface and let it sit for about 5–10 minutes until it becomes foamy.
2. Mix the Dough
In a large mixing bowl, whisk together the all-purpose flour, salt, and chia seeds. Create a well in the center and pour in the yeast mixture. Stir with a wooden spoon until a shaggy dough forms.
3. Kneading
Turn the dough onto a lightly floured surface. Knead for 5–7 minutes until the dough is smooth, elastic, and the chia seeds are evenly distributed. If the dough is too sticky, add flour one tablespoon at a time.
4. First Rise
Place the dough in a lightly oiled bowl. Cover with a damp cloth and let it rise in a warm, draft-free spot for about 1 hour, or until it has doubled in size.
5. Shape the Mini Flatbreads
Punch the dough down to release air. Divide the dough into 8–10 equal-sized balls (roughly the size of a golf ball). On a floured surface, use a rolling pin to flatten each ball into a circle or oval about ¼ inch thick.
6. Cooking
Heat a cast-iron skillet or non-stick pan over medium-high heat.
• Place one flatbread in the dry skillet.
• Cook for 1–2 minutes until bubbles form on the surface and the bottom has golden-brown charred spots.
• Flip and cook for another 1 minute.
7. Serving
Keep the finished flatbreads wrapped in a clean kitchen towel to stay soft and warm.
