Hello mga ka-Kusina, another day for a new recipe. Sharing with you today my Singkutsar recipe. Singkutsar is an Ilocano dish, that is similar to that of Pinapaitan and Sinanglaw) Pinapaitan is more of the bitter taste and the Sinanglaw is more of the sour taste. Singkutsar is like a combination of bitter and sour. The authentic Singkutsar is made with Beef inards and seasoned with the fresh beef bile, but since I am here abroad and it is hard to find beef inards and the fresh beef bile. I just used what is just available here. I used beef tripe and beef and frozen beef bile which is a little bit bitter than the authentic one. In our place we usually use Kamias (the fresh one) but some areas in Ilocos also use sampaloc for the sour taste. Please watch my video
