🧂 Samagri (Ingredients):
Khandvi batter ke liye:
Besan (Gram flour) – 1 cup
Dahi (Curd) – 1 cup (thoda khatta ho to best)
Pani – 3 cup
Haldi powder – ¼ tsp
Namak – swad anusar
Adrak aur hari mirch ka paste – 1 tsp
Tadka ke liye:
Tel – 1 tbsp
Rai (Mustard seeds) – ½ tsp
Curry leaves – 8–10
Grated nariyal – 2 tbsp
Hara dhaniya – 1 tbsp (barik kata hua)
👩🍳 Banane ka Tarika (Method):
Batter banayein:
Ek bowl mein besan, dahi, haldi, namak aur adrak-mirch paste daal kar ache se milayein. Phir dheere-dheere pani daal kar smooth lump-free batter bana lein.
Pakayein:
Is batter ko ek pan mein daal kar medium flame par lagataar chalate hue pakayein. Jab tak ye thick na ho jaye (lagbhag 7–8 minute).
Spread karein:
Jab batter thick aur smooth ho jaye to turant ise thali ya kitchen platform par patla-patla spread kar lein (jaldi karna zaroori hai).
Roll banayein:
Jab mixture thoda thanda ho jaye, to usse lambi strips mein kaatkar tight rolls bana lein.
Tadka lagayein:
Ek chhoti kadhai mein tel garam karein, usme rai, curry leaves aur daalein. Ye tadka Khandvi rolls ke upar daal dein.
Garnish karein:
Upar se grated nariyal aur hara dhaniya chhidak dein.
Serve karein:
Garam ya thanda dono tarah se serve kar sakte hain — chai ke saath bahut tasty lagti hai! ☕
