🍰 Coconut Passionfruit Pound Cake Recipe
🍞 Pound Cake Base
60g sugar
60g unsalted butter
85g all-purpose flour
2g baking powder
1 egg (50g)
3g vanilla extract
40g canned coconut milk
40g whole milk
Method
1. Cream softened butter and sugar until light and fluffy
2. Add the egg in 2–3 additions, mixing well each time
3. Add flour and baking powder
4. Add vanilla extract, coconut milk and milk
5. Pour into the greased pan and bake
📏 Pan size
20 × 5 × 6 cm (height)
🔥 Bake at 350°F for about 25 min
(I used a convection oven. Baking time may vary depending on your oven and cake size)
🥥 Coconut Passionfruit Ganache
120g white chocolate, chopped
40g canned coconut milk
30g passionfruit purée
10g unsalted butter (optional – adds shine and smoothness)
Method
1. Heat coconut milk + passionfruit purée in a saucepan or microwave
2. Pour over chopped white chocolate
3. Stir until smooth
4. Add butter and mix until fully combined
*** There will be leftover ganache after piping it into the cake. Save it and let it set for decorating the top later.
✨ Coconut Glaze
1. 90g powdered sugar
2. 30g canned coconut milk
3. 20g unsweetened shredded coconut
4. 5g melted unsalted butter
Method
Mix all ingredients and spread over the cooled cake as a glaze
