Chicken yaki udon is similar to yakisoba, but it uses thick and chewy udon noodles instead of thin and crispy soba noodles. It also has a simpler sauce that is made with soy sauce, gochujang, and ketchup. You can customize this dish with your favorite vegetables and protein, such as beef, pork, seafood, or tofu. For this recipe, you will need the following ingredients:
6 ounces of frozen udon noodles
1 tablespoon of olive oil
½ pound of boneless chicken breasts, cut into thin strips
½ onion, sliced
½ red bell pepper, sliced
½ cup of shredded cabbage
½ cup of carrot matchsticks
1 teaspoon of minced garlic
2 tablespoons of soy sauce, or more to taste
