8 cups water
½ tsp salt
¼ cup soy sauce
~4 cups cooked udon
1 sheet of dried kelp
2-3 green onions

** My additions: **
~1 tbsp sugar*
~3 tbsp mirin*
*these are estimates of what I added to taste
