In this video I show you how to Meal Prep for weight loss. Chicken Fajitas are one of my favorite foods to eat when I go out. But today I'm going to make these healthy but delicious. I'm showing you meal prep recipes that are easy and healthy. Meal Prepping is a great way to help you lose weight, save money and time. It's one of my top ways I have been able to lose weight and stay consistent. I hope you enjoy my meal prepping and meal prep recipes.

Chicken Fajitas

INGREDIENTS:

1 medium red pepper
1 medium green pepper
1 medium yellow pepper
1 medium onion
1 yellow squash
1 zucchini
2 limes juiced
3 garlic cloves
1/4 cup chopped cilantro
2 Tbsp olive oil
1 Tbsp cumin
1 Tbsp chili powder
1 tsp onion powder
1 tsp oregano
1 tsp salt
1 1/2 tsp paprika
2 tsp black pepper
1/2 tsp red pepper flakes


DIRECTIONS:

1. Combine all dry ingredients and oil and lime juice in a bowl. Reserve 1 1/2 tablespoons of marinade for vegetables. Mix and pour over chicken and let sit for at least 30 minutes preferably 4-6 hours in refrigerator
2. Cut up all vegetables in strips and set aside
3. Cook chicken for about 10-12 minutes in a skillet then remove. In same pan add vegetables to pan and cook for 2-3 minutes add remaining marinade
4. Add chicken back to pan and cook another 1-2 minutes then remove from heat so vegetables can stop cooking
5. Serve with salsa or fresh avocado - can be served in a tortilla or on a leaf of lettuce
