Quark is a fresh, slightly tangy cheese that gives the cheesecake filling a lovely lightness. If you can’t find quark, farmer’s cheese or cream cheese work beautifully.
This tart is simple to make, delicious, beginner-friendly and perfect for anyone who loves homemade baking with a fruity twist.

🌿 Recipe:
Tin: 26 cm (10 in) tart tin or pie dish
Bake at 180 °C (160 °C fan) / 350 °F for about 40 minutes.
The Crust:
260 g plain flour (spelt or wheat)
70 g natural cane sugar
20 g vanilla sugar
2 tbsp cocoa powder
⅛ tsp salt
½ tsp baking powder
160 g cold butter, diced
1 egg
1 tbsp + 1 tsp milk
The Filling:
500 g quark (farmer’s cheese or cream cheese)
80 g natural cane sugar
20 g vanilla sugar
1 tbsp vanilla pudding powder (or custard powder / pudding mix)
1 egg
Grated zest of ¼ lemon
Plus:
60–80 g blackberry jam (about 3–4 tbsp)
120–150 g blackberries (¾–1 cup)
