🥓BREAKFAST EGG + BACON ENGLISH MUFFIN / 1 SANDWICH IS 6 SMART POINTS!
▶What you need:
6 whole wheat english muffins
6 eggs
1/4 cup unsweetned milk
6 slices turkey bacon
6 slices reduce fat american singles
seasonings I used salt n pepper, garlic + onion powder
I cant believe its not butter spray
▶How to make:
STEP 1: Mix your 6 eggs and 1/4 cup milk in bowl, and add your seasonings whisking together. In a baking dish spray with olive oil spray add your eggs, next Bake on 350 for 12-15 minutes, then cut into 6 sqaures.
STEP2: Add your english muffins onto a baking sheet spray with butter spray and bake in oven until crispy. Next microwave your bacon in the microwave lay your slices of bacon on a paper towel and cover the top with a paper towel, microwave for 3 minutes and 30 seconds for 4 slices and the additional 2 slices for 2 minutes.
!!My microwave is small so I do 4 first then 2 slices!!
STEP3: Get all your ingredients together and assemble your english muffins. I added egg square then sliced cheese, and bacon then wrapped it up with aluminum foil and place in freezer.
🌿LUNCH ZUCCHINI FRENCH ONION ZOODLE BAKE / MAKES 4 SERVINGS AND 1/4 TH OF BAKE IS 3SP!
▶What you need:
3 zuchinnis, spiralized
1 yellow onion, sliced thin
2 tbsp white flour
2/3 cups beef broth, canned
1/4 cup water
4oz reduced fat shredded mozzarella cheese
seasonings: salt n pepper, garlic + onion powder, driedc parsley
▶How to make:
STEP1: Spiralize your zucchini then place in a bowl add salt and dry with a paper towel. Next cut your onion into thin slices.
STEP2: In a skillet spray with oil spray add your onions and cook until soft, then add your beef broth and flour and slowly mix them together with a whisk, then add your seasonings to the skillet and 1/4 cup water and mix until smooth. Next add your zoodles and toss together in the french onion gravy.
STEP3: In a casserole dish add your zoodles with french onion gravy, then add your cheese and seasonings to the top and Bake on 400 for 20-25 min / half way thru drain any liquid in the dish and place back in the oven.
🌮DINNER CHEESY TACO BAKE / MAKES 8 SERVINGS AND 1/8TH OF BAKE IS 3 SMART POINTS!
▶What you need:
16 oz 93/7 lean ground beef
1 can black beans
1 can corn
1 can rotel tomatoes + green chilies
1 packet low sodium dry taco seasonings
1 green pepper, diced
1 white onion, diced
1 frozen bag of cauliflower rice
3oz reduced fat mexican cheese
cilantro + green onions for topping
▶How to make:
STEP1: Cut your green pepper and onions into dices, in a skillet cook your meat and add your vegetables mixing together until pepper and onions get soft, then add 2 tbsp taco mix, next microwave your bag of cauiloflower rice.
STEP2: In a casserole dish add your cauliflower rice to the bottom of dish and 1 tbsp taco mix and mix together, then add your meat and veg mixture on top, add 1 tbsp taco mix to the top, your shredded cheese, and green onion.
STEP3: Bake on 350 for 20 minutes , top with fresh cilantro and green onions
