Today we’re making Chupe de Camarones, one of Peru’s most iconic and comforting soups, straight from the rocky Andes mountains.
Chupe de Camarones is a traditional Peruvian soup known for its creamy texture, shrimp stock made from scratch, and bold Andean flavors. It’s perfect for cold weather, family dinners, or anyone who loves rich seafood soups.
Ingredients
1.1 lb / 500 g Shrimps, peeled (reserve heads & shells)
5 cups (1.18 L) Water
1/3 cup (43 g) Flour
1/3 cup (76 g) Butter
1/2 Yellow Onion, diced
1 Red Bell Pepper
2 cloves Garlic, minced
1 tbsp (20 g) Tomato Paste
1 Ear of Corn, cut into 2” (5 cm) segments
1 Medium Potato, diced
1/2 cup (75 g) Green Peas
1 cup (240 ml) Heavy Cream
1 tsp (1 g) Dried Oregano
Salt & Pepper to taste
