CHORIPAN - Sausage Slider - The Best Street Food in South America! BONUS Chimichurri Sauce Recipe!!

Choripan
INGREDIENTS
4 Argentine Sausages (or a spicy sausage)
4 French rolls or water rolls, cut
½ cup chimichurri (recipe below)
Olive oil for cooking

INSTRUCTIONS
Lightly coat sausages in oil and Add to a skillet on medium-high heat.
Cook for 1-2 minutes per side, until they reach an internal temperature of 140 degrees. Remove sausage and keep skillet on heat.
Place rolls in skillet, Toast both sides lightly. Remove from skillet and carefully cut the warm rolls in half, keeping them attached.
Slice sausage in half keeping them attached. Place sausage in bread rolls and spoon chimichurri on top.
For outdoor cooking, follow this same recipe with grill and remove sausage at 140 degree internal temperature.

Chimichurri
INGREDIENTS
1 bunch of Curly parsley (leaves only), roughly chopped
1 cup Red onion, diced finely
2 tbsp. Garlic, minced finely
1 tsp. Chili flakes
Juice of 2 limes
2 tbsp. Red wine vinegar
Dash of tabasco
½ cup canola oil
½ cup olive oil
Salt and pepper to taste

INSTRUCTIONS
In a blender, place parsley with both oils and blend until parsley is chopped small, but not completely pureed.
Add all other ingredients into a large bowl.
Toss with parsley mixture and season with salt and pepper.
Serve room temp. This recipe also works great at a marinade for grilled meats.
