自制烟熏培根 Homemade Smoked Bacon:
五花肉 Pork belly 900-1000g
亚硝酸钠 Sodium Nitrite 15g* (Optional 可以不用但是味道就有差)
海盐 Sea Salt 60g
黑胡椒 Black pepper 20g
糖 Sugar 40g
混合香料Mixed herbs
香草干Dried parsley
蒜米 Garlic
烟熏木 Smoking wood Chips
注意:亚硝酸钠是防止细菌生长,增强风味,并保留肉的红色。
您可以忽略它,但这是明智的安全措施。另外,不加亚硝酸钠制成的培根味道也不佳
,份量是要根据五花肉的重量 千万不可以多放. 平均每1公斤的肉放只可以放16克的亚硝酸钠.
Remark : Sodium Nitrite is to prevent bacterial growth, boosts flavor, and preserves the meat's red color. You can omit it, but it's a smart safety measure. Plus, bacon made without Sodium Nitrite just doesn't taste as good.
When rubbing on the dry cure, be sure to cover the sides and edges of the belly well.
