Hello everyone ! This is 4th time ..!
••• Do you know which Japanese seasonings are really needed to use Japanese cuisine ?! •••
••• Selected Today’s Japanese seasonings ..
Miso paste: MISO / This is a very traditional seasoning made by fermenting boiled soybeans with salt and KOUJI fungus.
Soy sauce: SYOYU / Made from wheat, soybeans, salt, water. This is a multi-purpose condiment and essential to Japanese cuisine.
Sweet Cooking Sake : MIRIN / Mirin is a traditional Japanese sweetener and type of rice wine with lower alcohol content.
Sake for cooking : RYORI-SHU / Cooking Sake is an alcoholic beverage made fermented rice and one of the most important condiments of Japanese cuisine.
Rice Vinegar: SU / There are several type of vinaiger in Japan but if you are gluten free allergies person, please choose only Rice type.
YUZU-KOSHO / Chili, salt and zest of Yuzu
Sesame oil: GOMA-ABURA /
Spicy chili : SHICHIMI /
For Japanese stock
Mushroom SHIITAKE / Kelp : KONBU
Dried Bonito : KATSUOBUSHI / dried fish
Small dry sardines : NIBOSHI / •••

// My advice //
If you are GLUTEN FREE allergies person, be careful ! some Japanese seasonings included,
Wheat / in Japanese KOMUGI 小麦 / or
/ Barley OOMUGI 大麦 / for example as soy sauce in general and miso paste, the southern type called MUGI-MISO 麦味噌 / some type of vinegar etc.
TAMARI soy sauce
If it is made with traditional methods, it use 100% soybeans, but sometimes use wheat (less than 20%), so it can not be said that all is gluten-free
