Basque Burnt Cheesecake
Ingredients:
Cream cheese 300 grams
Whipy whip cream 200 grams
Eggs 5
Caster sugar 150 grams
Flour 20 grams
Vanilla essence 1/4 tsp
Method:
In a stand mixer bowl whip cream cheese with sugar for couple of minutes. Add in flour & vanilla essence. Give it a good mix.
In another bowl mix Whipy whip cream with eggs then gradually add in cheese mixture until fully incorporated. Pour this mixture into a lined pan & bake it at 190C with water bath for 45 minutes or until the top layer turned very dark in color. Remove from oven & let it rest for 2 hours at least in room temperature. Then keep it in the chiller for 6 hours at least before serving.

Hot Chocolate Cookies
Ingredients:
Flour 150 grams
Cocoa powder 30 grams
Salt a pinch
Cream of tarter 1 tsp
Baking Soda 1/2 tsp
Caster sugar 125 grams
Egg 1
Butter 115 grams
Paprika powder 1/4 tsp
Cinnamon powder 1/2 tsp
Milky’s dark chocolate 100 grams
Milky’s Chocolate chips 25 grams
Marshmallow mini 25 grams
Method:
In a large bowl mix flour, cocoa powder, cinnamon powder, paprika, salt, cream of tartar & baking soda. Keep aside. Now in a stand mixer bowl beat butter with sugar for couple of minutes. Add in egg. Give it a good mix. Add all dry ingredients. Mix well until it forms a dough. Add in marshmallows, chocolate chunks & chocolate chips. Gently fold it and portion into 25 grams each ball. Bake it at 170c for 13 to 15 minutes.
