Rava cake (or Sooji cake) is a popular eggless, moist, and spongy Indian tea-time treat made primarily with semolina.
Standard Eggless Rava Cake Recipe
This version uses common pantry staples and can be baked in an oven or on a stovetop.
Ingredients
Semolina (Rava/Sooji): 1.5 cups (fine variety preferred).
Liquid Base: 1 cup milk and ½ cup fresh yogurt (curd).
Fat: ¼ cup oil and ¼ cup softened butter (or ½ cup of either).
Sweetener: 1 to 1.25 cups powdered sugar.
Leavening Agents: 1.25 tsp baking powder and ½ tsp baking soda.
Flavorings: 1 tsp vanilla extract or ½ tsp cardamom powder.
Add-ins: ¼ cup tutti frutti or chopped nuts (optional).
Instructions
Prepare the Base: In a large bowl, whisk together the yogurt, sugar, oil, and butter until smooth.
Soak the Rava: Add the semolina and milk to the wet mixture. Mix well and let it rest for 20–30 minutes; this is crucial as semolina absorbs moisture and softens.
Add Final Ingredients: After resting, the batter will be thicker. Add the baking powder, baking soda, and flavorings (vanilla or cardamom). Gently fold in tutti frutti or nuts if using.
Bake:
Oven: Pour into a greased tin and bake in a preheated oven at 180°C (350°F) for 30–40 minutes until a toothpick comes out clean.
Pressure Cooker/Pan: Place the tin on a stand inside a preheated cooker (without whistle/gasket) and cook on low-medium flame for 40–45 minutes.

Iyengar Bakery Style: Often includes a small amount of all-purpose flour (maida) for a softer crumb and is flavored with vanilla or pineapple essence.
Coconut Rava Cake: Includes freshly grated or desiccated coconut in the batter for added texture and richness.
Mango Rava Cake: Replaces some milk with thick mango pulp for a seasonal fruity twist.
Healthy Swap: Use whole wheat flour instead of maida and jaggery or brown sugar instead of white sugar.
