B R E A K F A S T - Blueberry Oatmeal Bread / Makes 11 slices and 1 slice is 6 Smart Points
these slices are super thick so keep that in mind you could get more slices out of it if made thinner*
What you need:
1 1/3 cup room temp water
1 cup oat flour
3 cups white flour
1/2 tbsp baking powder
2 tsp instant yeast fast acting
4 no cal sweetner ( note I recommend adding more sugar packets maybe 6-7)
2 tbsp coconut oil
2 tsp sea salt
blueberry
2 tbsp crushed walnuts
What to do:
Step 1: Use 1 cup rolled oats in a food processor to make into oat flour, place into a big bowl, microwave your oil, next add your oat and white flour, oil, water, plus all other ingredients into the bowl, mix until it is a dough form. Place a towel over the bowl and let sit for 25-30 minutes
Step 2: Place flour on the surface you will be kneeding your dough. Take dough out of bowl after it has sat and kneed your dough for up to 8 minutes using your hands, then spray a clean new bowl well with oil spray, place dough back into bowl with oil and place towel over and let sit for 40 min
Step 3: Take dough out of the bowl, add your blueberries and walnuts inside then form a log, top with walnuts, and place in bread pan, Bake on 350 for 45 minutes
L U N C H - General Tso Chicken / Made 7 servings and 1 serving is 1/2 cup for 3 Smart Points
What you need:
4 chicken breast
1/2 cup corn starch
1 tbsp ginger paste
1 cup simply balanced general tso sauce
1 crown of broccoli
1/2 tbsp minced garlic
seasonings : garlic powder, salt n pepper, red pepper powder
What to do:
Step 1: Cut your chicken into dices, then in a large bowl add your chicken, spices, and corn startch and mix together. In a pan with sesame seed oil cook your chicken 2 minutes one each side, then place chicken with broccoli on a baking sheet lined with foil adding 1/2 cup of sauce mix together, then add another 1/2 cup of sauce so that the chicken is drenched in General Tso sauce. Bake on 435 for 30-35 minutes
D I N N E R - White Bean Turkey Chili / Made 10 servings and 1 cup is a serving for 2 Smart Points
What you need:
16oz of 93/7 lean ground turkey
2 cups chicken broth 33% less sodium
2 cans of great northern white beans, drained and rinsed
1 can of corn, drained and rinsed
2 cans of green chilies
1/2 cup light sour cream
3/4 cup fat free half n half
1 white onion
1/2 tbsp minced garlic
seasonings: salt n pepper, garlic powder, chili powder, and dried oregano
What to do:
Drain and rinse your corn and beans, dice your onions into small dices, then add seasonings and all other ingredients into crockpot, cook on high for 6 hours. Top with shredded pepper jack cheese, light sour cream, and avocado.
