🫐 Multiseeds & Nuts Energy Laddu (Kids-Friendly)
📜Ingredients
Almonds – ½ cup
Flax seeds – ½ cup
Pista – ½ cup
Cashews – ½ cup
Watermelon seeds – 2 tbsp
Melon seeds – 2 tbsp
Sunflower seeds – 2 tbsp
Dry grated coconut – 2 tbsp
Dates – 1 bowl chopped
Jaggery – a small amount
Ghee – 1 spoon
Water – as needed
Method
● Dry roast 1 cup of almonds until about 70% done. Add watermelon seeds, sunflower seeds, and cashews, roast lightly, and remove from heat.
● In the same pan, dry roast 1 cup of flax seeds until half done. Add melon seeds and dry grated coconut, roast briefly, and remove.
● Add 1 cup of pista, roast for 40 seconds, and take everything out. Let all roasted ingredients cool completely.
● Once cooled, grind all the roasted ingredients into a fine powder and keep aside.
● In a pan, add 1 spoon of ghee, chopped dates, and a little jaggery. Add some water and let it boil until the dates soften.
● When the mixture looks slightly mashed, use a masher to make it into a smooth paste (date syrup).
● Let the syrup cool slightly, then mix it with the prepared powder.
● Mix well and shape into laddus.
