These SCRUMPTIOUS mini handheld QUICK CHEESCAKES are the stuff of which summer dessert dreams are made! They are a snap to prepare, require very little oven time on hot days and.....can be made in advance when you are expecting a crowd! We love these with strawberries and blueberries on a pillow of white whipped cream -- for a super patriotic dessert for the Fourth of July!
Ingredients
Crust-
2/3 cup (80 g) Graham Cracker Crumbs
2 tbsp (28 g) Unsalted Butter
1 tbsp (12 g) Sugar
Cheesecake Filling-
8 oz (225 g) Cream Cheese at room temp
1/4 cup (50 g) Sugar
1/4 cup (60 g) Sour Cream at room temp
1 tsp Fresh Lemon Juice
1/2 tsp Vanilla
1 egg at room temp
