Aquavit is the recipient of two Michelin stars, and three stars by The New York Times. Chef Emma Bengtsson is the first female Swedish chef and the second female chef in the United States to win two Michelin stars.
Chef Emma Bengtsson created “Japanese Hamachi Crudo with a sea buckthorn vinaigrette” using Japanese Buri prepared with apple brunoises and seasoned with the dressing. Finely cured Japanese Buri brought a rich but crisp taste and dill, watercress, and pickled radish flowers garnished the dish perfectly.
