We're back in the kitchen with Queen! Learn how to cook seared cabbage and coleslaw.
Ingredients:
Grated or shredded Cabbage(green and or red)
Diced Onion
Diced or stripped Peppers, green, red or yellow
Crushed or finely chopped Garlic and ginger if desired
Grated Carrots
Grated or finely chopped Apple(optional) sprinkled with lemon juice to avoid it losing its colour
Finely chopped Celery (optional)
Chillies flakes, powder etc.
Boiling water
3tbs of cooking oil of choice
Raisins(optional)
Seasonings:
Black or White pepper
Vegetable stock
Salt
Paprika
Choice of herbs
Mayonnaise
Mustard (optional)
Vinegar (optional)
Dry or fresh parsley
Method:Preparation10-30 minutes depending on quantity
Remove outer leaves of cabbage
Shred or grate cabbage as desired
Put it in a colander or sieve
Sprinkle lot of salt(salt will be diluted as it will be rinsed
Pour boiling water in the colander over the sink so that the hot salted water will drain
Rinse thoroughly with cold water to stop cooking
Cooking: 5 to 10 minutes
Switch on the stove to high, add cooking oil
When oil is heated reduce the heat to avoid burning
Add onions, sauté them until golden brown not burnt
Add cabbage and carrot if desired, add ginger and garlic if desired
Add peppers, season to taste, sauté for 5minutes not to over cook
Serve hot or cold
NB: Enjoyable crunchy not overcooked, you can add mixed vegetables, peas, corn etc. to this recipe
It can be served cold as a salad by adding tuna and mayonnaise
COLESLAW preparation Recipe'
Quick and easy- 10 to 15 minutes depending on quantity
Put together grated green and or red cabbage to give colour, grated carrots, chopped or grated apple sprinkled with lemon juice and chopped celery in a bowl
Add a handful of raisins if desired
Add a teaspoon of apple cider vinegar if desired
sprinkle a teaspoon of parsley
Drizzle black or white pepper
Sprinkle a pinch of salt if desired
Add half teaspoon mustard if desired
Add mayonnaise, spoon at a time while mixing until you are happy with your dressing
Serve as desired
