Bendekaye Huli (Ladies Finger Sambar) is one of the most comforting and flavorful dishes from Karnataka! 😋✨
Made with fresh bendekaye, aromatic spices, and tangy tamarind, it’s a perfect combo with hot rice for lunch or dinner. 🍛🔥

Bendekai (Okra) Curry – Serves 4
Ingredients
1. For Masala
Urad Dal (White Lentils) – 1 tsp
Chana Dal (Bengal Gram) – 1 ½ tsp
Methi Seeds (Fenugreek Seeds) – ¼ tsp
Cumin Seeds (Jeera) – 1 tsp
👉 Fry until golden brown, then in the same pan add:
Coriander Seeds (Dhaniya) – 1 tsp
Dry Red Chillies – 3–4
Curry Leaves (Karibevu) – 10–15 leaves
Grated Coconut – 1 cup
Set aside, let it cool, and grind into a fine paste.
2. Toor Dal
Toor Dal – ¼ cup
Salt – to taste
👉 Cook the dal with water in a pressure cooker for 4 whistles.
3. Bendekai / Okra
Bendekai / Okra / Ladies Finger – 1–2 cups (sliced)
👉 Fry until crispy and keep aside.
4. Final Tadka & Curry Base
Vegetable Oil – 4 tsp
Ghee – 2 tsp
Mustard Seeds – 1 tsp
Curry Leaves – a few
Dry Red Chillies – 2–3
Cooked Toor Dal
Ground Masala Paste
Turmeric Powder – ½ tsp
Tamarind Water – 2 tbsp
Salt – as per taste
Jaggery – ½ tsp
Red Chilli Powder – 1 tsp
👉 Heat oil and ghee, add mustard seeds, curry leaves, and red chillies.
👉 Add cooked dal, ground masala paste, turmeric, tamarind water, salt, jaggery, and red chilli powder.
👉 Cook until everything is well combined.
👉 Finally, add fried okra and mix gently.
Finishing Touch
Garnish with fresh coriander leaves 🌿
Serve hot with rice or Chapati🍚🫓
