Today we find out if aging PULLED PORK makes it better We bought a bone in pork shoulder and subjected it to 28 days of dry aging in our refrigerator. We kept it at the perfect temperature (this is our garage fridge that no-one goes into). Stick around and find out how it turned out.

We asked ourselves, what can we do different everyday. So this is what we came up with. Dry Aged Pulled Pork!

Here at Hey Bud Smoking BBQ we love smoking meat and we love eating it even more. Enjoy our versions of pulled pork w/ avocado on a Hawaiian bun on a Sunday afternoon. Keeping it simple.

Overall cook time: 7 hrs
225F until an internal temp of 166F. Wrap and finish at 275F for an IT of 206F.

Used my home made rub of salt, pepper, garlic, minced onions, cumin, and paprika. Regular mustard used as the binder to hold it all together.

Aged the pork in a roasting pan with a roasting rack over a bed of table salt. Left the skin on and placed on the roasting rack skin side up. Temperature verified every single day to ensure quality. The rest is what you see in the video. Short time lapse in the video.

Cooked on a Traegar Pro 34.
Cherry and Apple pellets.
