Ingrdients for Aloo Gobi Recipe:
(Tsp-Teaspoon; Tbsp-Tablespoon)
Gobi (Cauliflower florets)- 300 gms
Potato cubes- 2 medium (150 gms)
While frying Aloo & Gobi:
Salt- 1/2 tsp in cauliflower+ a pinch in potatoes
Turmeric- a pinch in cauliflower
Oil - 1.5 cups
Onion Tomato paste:
Onion, rough chopped- 1 medium (75 gms)
Green Chillies, rough chopped- 4 nos
Tomato, small cubes- 2 small (100 gms)
Tempering:
Cumin Seeds- 1 tsp
Hing (asafoetida)- 2 pinches
Crushed Ginger Garlic- 2 tsp
Spice Powders:
Turmeric Powder- 1/2 tsp
Red Chilli Powder- 1.5 tsp
Coriander Powder- 2 tsp
Pepper powder- 1/2 tsp
Garam Masala Powder- 1/4 tsp
Other Ingredients:
Kasuri Methi (crushed and powdered)-1/2 tsp powder
Oil- 2 tbsp
Salt- 1/4 tsp
Coriander leaves, chopped for garnish- 3 tbsp
Preparation:
Cut the cauliflower into florets and peel & cut the potatoes into cubes.
Crush the peeled ginger and garlic.
Chop the onion, tomato and green chillies.
Coarsely grind it into a rough paste in a grinder. Do not add any water while grinding.
Shallow fry the cauliflower and cubed potatoes.
To do that, heat oil in a kadhai and add the cauliflower florets. Give a mix. Now add a pinch of turmeric and 1/2 tsp salt. Mix again and fry on medium heat for 8-10 mins till the florets golden in colour and the edges start becoming brown.
Remove from oil onto a bowl and now add the potato cubes into the oil for frying. Add a pinch of salt. Keep frying on medium heat for around 4-5 mins till they are fried and edges start becoming brown.
Remove into the same bowl.
Process:
Heat 2 tbsp of the same oil in a kadhai and first add the cumin seeds. Once it splutters, add the hing(asafoetida) and give a mix.
Now add the crushed ginger and garlic and fry on medium heat for 30 secs and then add the onion tomato paste made earlier.
Fry on medium heat for 4-5 mins till the paste is cooked and oil separates.
Add all the spice powders other than garam masala powder.
Give a mix and fry on low heat for 2 mins.
Now add the fried cauliflower and potatoes and give a mix. Add the garam masala powder and crushed Kasuri Methi, give a mix and cover & cook on low heat for 8 mins. Give a stir after 5 mins.
Once done, remove lid, season with a pinch of salt and garnish with chopped coriander leaves.
