2-3 lbs oxtail, cleaned in lemon juice & water
1 onion, chopped
4 cloves garlic, chopped
1-2 jalapeños, chopped or, 1 habanero, to get desired heat
1-2 sweet bell pepper, as desired
3 tomatoes, chopped
2 carrots, sliced
2 potatoes, cut into quarters
3 tbsp cilantro, chopped
1/4 cup manzanilla olives
1/4 cup tomato sauce
2 tsp tomato paste
2 tsp cumin
2 tsp oregano
2-3 tsp salt, or to taste
1 tsp black pepper
1 1/2 tsp paprika
1/2 tsp garlic powder
2 bay leaves
1 beef bouillon
1 lemon, juiced
1/4 cup dry white wine
4 cups beef stock
