Vanilla Crumble Cake
Ingredients:
1 c (130g) cake flour
1/2 c (57g) + 1/3 c (38 g) + 1/3 c (38 g) powdered sugar
6 egg whites
1 tsp vanilla extract
1/2 tsp cream of tartar
6 yokes
Directions:
1. Preheat oven to 325°.
2. Whisk together the cake flour and 1/2 c. powdered sugar.
3. In the bowl of your stand mixer on medium speed, whisk egg whites, vanilla extract and cream of tartar. until soft peaks form and it's foamy all the way to the bottom.
4. Gradually add in 1/3 c powdered sugar to make a meringue. Scrape it into another bowl.
5. On high speed, whisk yokes until they're lemon color (5 minutes). Gradually add in the rest of the powdered sugar.
6. Fold the meringue into the yoke mixture as shown careful not to deflate the meringue.
7. Sift in thirds the flour mixture and fold in gently.
8. Dollop into an ungreased tube pan and run a skewer around the edges.
9. Bake for 30 minutes. Then allow to cool upside down on the countertop (about an hour).
Strawberry Crunch topping
24 Golden Oreo cookies
3 oz -box Strawberry Jell-o
4 T melted unsalted butter
Directions:
1. Crush the cookies with a food processor or a baggie and rolling pin.
2. Combine in the Jell-o mix.
3. Combine in the butter.
Strawberry Filling
Ingredients:
4 c (about 2lbs) chopped up strawberries
1/2 c strawberry jelly or jam
Directions
1. Heat up the jam and add in the chopped up strawberries. Leave a few cut in half to adorn the top.
Whipped Cream Frosting
Ingredients:
4 c. (1 liter) heavy cream
5 T instant pudding (We used strawberry milk shake flavor)
1 c. powdered sugar
2 tsp strawberry extract if not using strawberry flavored pudding mix
Directions:
1. In the bowl of a stand mixer, whisk together cream and powdered sugar (and extract if using) until it looks like soft-serve ice cream. Add in pudding mix and whisk to stiff peaks.
