How to Make Dinner in 20 Minutes - Gnocchi with Rapini and Sausage

Dinner in less than 20 minutes! Thank you to my in-laws' Apulian inspiration! Traditionally, this dish is made with orecchiette but this pasta can take 15 minutes or more to cook! And while I can make my own gnocchi, when I find a brand that is pretty close to homemade, I'm in!
Think of this as a "no recipe" recipe. For 4 people, I use 1 - 2 bunches of rapini, 2 - 3 links of good quality Italian sausage, 2 cloves of garlic, a pinch or two of hot pepper flakes, 500g bag of good quality gnocchi, and lots of extra virgin olive oil. Timing is everything! Because the gnocchi only take 2 minutes to cook, plan accordingly.
Put a large pot of water to boil. (Don't you love when this is the first step? It means that dinner is ready very soon.)
Trim ends of rapini, divide thicker stalks, chop into thirds, wash and rinse. Set aside.
Heat cast iron pan, then add sausage meat (removed from casing) and stir to break up. Add several tablespoons of olive oil.
When meat is no longer pink, add garlic and hot pepper flakes and stir. Simmer to caramelize.
By now, pasta pot should be boiling. Salt generously to taste like the sea. Add rapini and cover. Bring to a boil and cook for a few minutes. Add gnocchi and stir gently. Cook for about 2 minutes. When gnocchi are almost all floating, lift with a spider or slotted spoon and add to cooked sausage meat. Be sure to include a little of the pasta water.
Toss with two wooden spoons. Drizzle more olive oil and continue tossing for a minute to emulsify the oil with starchy pasta water.
Sure, you can add grated Parmigiano Reggiano… just don’t tell my mother-in-law.
Serve casually straight from the pan or serve it on pretty plates for an elegant meal.
