Ingredients:
4 pieces of chicken
3 medium onions
3 to 4 dried plums (or prunes) per person
1 tablespoon tomato paste
Turmeric, salt, and pepper to taste
A little sour orange juice or verjuice (sour grape juice)
Saffron, as desired
Preparation: Chicken and Plum Stew
Finely chop the onions and sauté them in oil with a little salt and turmeric until golden. Add the washed plums and continue frying until they’re slightly caramelized. Then stir in the tomato paste and fry it briefly to bring out its flavor. Set this mixture aside.
Next, season the chicken pieces with your preferred spices and fry them on both sides until golden. Once browned, add them to the onion and plum mixture. Pour in some boiling water to cover the ingredients.
Let the stew simmer gently for about 45 minutes so the flavors meld and the chicken cooks through. After the first 15 minutes, add saffron to enhance the aroma and color.
