Simple recipe for Instant Dhokra.
Ingredients:
Dhokra:
1 Cup Semolina
1 Tablespoon Chickpea/Channa Flour
3/4 Cups Yogurt
1/2 Cup Water
1/2 Teaspoon Turmeric
1 Teaspoon Roasted Cumin Seeds
1 Tablespoon Sugar
1/2 Teaspoon Caraway Seeds
3/4 Teaspoon Ginger Paste
1 Teaspoon Green Chilli Paste
½ Teaspoon Garlic Paste
1 Teaspoon Salt
2 Tablespoons Lemon Juice
4 Tablespoons Vegetable Oil
1 ½ Tablespoons Cilantro
1 Teaspoon Eno/Fruit Salt
Tadka/Vagar:
2 Tablespoons Vegetable Oil
1 Teaspoon Mustard Seeds
¼ Teaspoon Asafoetida
1 Teaspoon Cumin Seeds
Dry Red Chilis
Garnish:
Red Chilli Powder
1 Teaspoon Sesame Seeds
1 Teaspoon Desiccated Coconut
Red and green chilies
Cilantro
Simple Chutney:
3 Tablespoons Tamarind Sauce
2 Tablespoons Chilli Garlic Sauce
Helpful Tips:
1. Before you add fruit salt, make sure the water in the steamer is boiling.
2. Once the fruit salt is added, stir it in one direction only, this will allow the chemical reaction to occur in such a way that air is trapped in the mixture, making your Dhokra fluffy.
3.The towel is added to the lid to attract moisture, preventing the Dhokra from getting soggy.
4.The spices can be adjusted to your taste.
5. Garnish with the red chilli powder only after the Dhokra is finished cooking otherwise, if you put it before, your Dhokra will be completely red.
