🔥 Chicken Ghee Roast | Hotel Style | Mangalorean Special
A rich, spicy and flavour-packed Chicken Ghee Roast made with Kashmiri chillies, roasted spices and pure ghee. This hotel-style recipe gives perfect balance of heat, tang and aroma.
📝 Ingredients
For Soaking
Kashmiri red chillies – 8 (deseeded)
Dry red chillies – 3 (deseeded)
Cashew nuts – 5
Soak all in hot water for 1 hour
For Marination
Chicken – ½ kg
Turmeric powder – 1 tsp
Curd – 2 tbsp
Salt – as needed
Marinate for 30 minutes
Dry Roast & Grind
Coriander seeds – 1½ tbsp
Cumin seeds – 1 tsp
Black pepper – 1 tsp
Poppy seeds– ½ tsp
Fenugreek seeds – a pinch
For Grinding
Garlic – 6 cloves
Ginger – 2 inch piece
Roasted spices
Tamarind –1/4 of lemon-size
Jaggery – 1 tsp
Soaked chillies & cashews
For Cooking
Ghee – 2–3 tbsp
Curry leaves – few
👩🍳 Method
Soak Kashmiri chillies, dry red chillies and cashews in hot water for 1 hour.
Marinate chicken with turmeric, curd and salt. Rest for 30 minutes.
Dry roast coriander seeds, cumin seeds, pepper, poppy seeds and fenugreek till aromatic.
Grind soaked chillies, cashews, roasted spices, garlic, ginger, tamarind (¼ lemon size) and jaggery into a smooth paste. Add little soaking water if needed.
Heat 1 tbsp ghee in a pan and cook the marinated chicken separately until 90% cooked. Keep aside.
In another pan, heat 2 tbsp ghee, add the ground paste and cook for 10–12 minutes until raw smell disappears and ghee separates.
Add the pre-cooked chicken to the masala and mix well.
Add curry leaves and roast till thick, glossy and well coated with ghee.
