Yuca: Potato of the Caribbean

Yuca is a popular tuber (what some would call) the potato of the Caribbean which we cooked two different ways: "Yuca con Mojo" and "Aranitas de Yuca." Mojo is a garlic and citrus marinade or sauce and "Aranitas" translates to little spiders (how they look when fried). This is a new series highlighting the indigenous foods of the Taino people of the Caribbean, and nothing says the Caribbean more than yuca (aka cassava). Yuca is a staple Caribbean food and has been around since the Taino people discovered Columbus in the 1500s! Ingredients
For the Mojo
6 cloves garlic
Juice of 1 orange
Juice of 2 Limes
1 tsp Kosher salt
1/4 tsp black pepper
1 tsp cumin
1 tsp oregano
1/4 tsp red pepper flakes (optional)
1/4 cup olive oil

For the Aranitas
2 lbs. fresh yuca (cassava)
1/4 cup cotija or parmesan cheese (optional)
1/2 tsp Kosher salt
1 tsp granulated sugar
1 tsp Anise seed
1 egg
Oil for frying
