Vegan Brownie Taste Test - carob brownies, no oil & gluten free

We did a Vegan Carob Brownie Taste Test to see whether okara, mashed sweet potato, carrot or lentils work best in this yummy gluten free and oil free recipe. Watch the video to find out the winner! You can also replace carob with cocoa powder and gluten free flour with fine wholegrain wheat flour if you are OK with gluten.
Fudgy Vegan Brownie
WET:
1 1/5 cups fresh okara/mashed sweet potato/mashed steamed carrot/mashed cooked lentils
½ cup almond or cashew butter (or use sunflower seed butter if allergic to nuts)
¼ cup unsweetened apple sauce
1 tsp vanilla essence
DRY:
1 cup coconut sugar
¼ cup carob or cocoa powder
¼ cup rice flour (or use gluten free flour mix)
1 Tbsp arrowroot starch (or use any other starch)
1 tsp baking powder
¼ tsp salt
Bake at 180 degrees Celcius for 35-45 minutes.
