Authentic German Potato Pancakes - Kartoffelpuffer Recipe (ASMR)

Authentic German potato pancakes also known as Kartoffelpuffer. Every German probably has their own recipe for Kartoffelpuffer, but this is the recipe that my German Oma and mother passed on to me. Traditionally German potato pancakes are topped with applesauce and sugar or with a dollop of sour cream. You can also top with a poached egg and a side of bratwurst sausage which makes a delicious and authentic German style breakfast. #Kartoffelpuffer #Germanpotatopancakes #SuperTastyBites

INGREDIENTS - amount below will make 4 to 8 small pancakes

2 to 4 large starch potatoes - russet potato works well.
1/2 medium white or yellow onion
1 whole egg
1/2 tsp. baking powder ( you can omit this step if you prefer - but my mom always added a bit of baking powder - I find that it doesn't make a big difference if you leave it out)
1/2 tsp. salt
1/4 tsp. fine ground black pepper
You can adjust salt and pepper to your taste preference
1 to 2 TBS all purpose flour - if you use 4 potatoes then 2 TBS flour os best = but I only used 2 potatoes in this video, so I ended up using just 1 TBS flour. My mom never added a whole lot of flour to the mixture - just enough to help bind the potato with the egg and the flour will absorb some of the liquid as well.

You will need a clean kitchen towel or cheese cloth to drain the liquid from the potatoes.
You can grate the potatoes with a box grater - my mom always used a micro grater to get that fine potato mixture.
