Good Morning dear ones! This morning we enjoy the wonderful and I do mean delicious Vegan Tahini Potato Salad! Yum - double lishous, is that a word? Hum... Easy to make and so rewarding! VEGAN TAHINI MAYONNAISE
1 Cup Water 1 Cup Tahini
1 ½ tsp Onion Powder ½ tsp Garlic Powder
1 tsp Sea Salt 1/4th Cup Lemon Juice
Blend all ingredients on High for 30 seconds until creamy. To use as dressing reduce the Tahini to 3/4ths Cup.
POTATO SALAD
WET INGREDIENTS:
3 ½ Cups Cooked Potatoes cubed
1 Cup Diced Celery (fine)
½ Cup Diced Onions
2 TB Fresh Parsley (diced)
1/3rd to ½ Cup Black Olives (sliced)
1 TB Lemon Juice
1 Cup TAHINI MAYONNAISE Above
DRY INGREDIENTS:
1 tsp Sea Salt
2 ½ tsp Onion Powder
1/8th – 1/4th tsp Garlic Powder
1 ½ tsp Dill Weed
1/8 tsp Turmeric
Put all ingredients into a bowl and mix together well. Serve hot or cold! Enjoy! In my book this tastes "way better" than egg based potato salad!
