🌶️ Iffa Chicken Recipe
Ingredients:
For the Chicken Marinade:
Chicken breast – 2 pieces (about 500 g)
Thick curd (yogurt) – ½ cup
Cumin powder – 1 tbsp
Coriander powder – 2 tbsp
Red chilli powder – 1 tbsp
Garam masala – ½ tsp
Ginger-garlic paste – 2 tbsp
Salt – ½ tsp (adjust to taste)
Lemon juice – juice of 1 full lemon
Mustard oil – 1 tbsp
For Cooking:
Oil – 3 tbsp
For the Cheese Sauce:
Boiled egg whites – 2
Cheese cubes – 2 (broken into pieces)
Garlic – 10 cloves
Salt – ¼ tsp
Fresh cream – 2 tbsp
Vinegar – 1 tsp
Sugar – ¼ tsp
Pepper powder – a pinch

Method:
1. Prepare the Chicken:
1. Take 2 chicken breast pieces (about 500 g).
2. Poke the chicken all over with a toothpick to help the marinade absorb better.
3. Set the chicken aside.
2. Make the Marinade:
1. In a mixing bowl, add:
½ cup thick curd
1 tbsp cumin powder
2 tbsp coriander powder
1 tbsp red chilli powder
½ tsp garam masala
2 tbsp ginger-garlic paste
½ tsp salt
Juice of 1 lemon
1 tbsp mustard oil
2. Mix all ingredients well to form a smooth paste (without lumps).
3. Marinate the Chicken:
1. Coat the poked chicken pieces evenly with the prepared masala.
2. Transfer the chicken and remaining marinade to a covered container.
3. Refrigerate for 3–4 hours (for best flavour).
4. Cook the Chicken:
1. Heat 3 tbsp oil in a pan over medium heat.
2. Place the marinated chicken pieces in the pan.
3. Cover with a lid and cook on low flame for 10 minutes on each side.
4. Flip the chicken and cook again for another 10 minutes on each side, until fully cooked and slightly charred.
5. Prepare the Cheese Sauce:
1. In a mixer jar, add:
2 boiled egg whites
2 cheese cubes
10 garlic cloves
¼ tsp salt
2 tbsp fresh cream
1 tsp vinegar
¼ tsp sugar
A pinch of pepper powder
2. Grind everything into a smooth, creamy paste. Keep aside.
6. Final Step:
1. Once the chicken is cooked, pour the prepared cheese sauce over it.
2. Cover the lid and cook for 30 seconds on low flame.
3. Turn off the stove.
