• Granulated sugar — 130 g (⅔ cup)
• Unsalted butter, cold, cubed — 150 g (⅔ cup)
• Egg — 40 g (about ⅔ of a large egg)
• Vanilla extract — ⅔ tsp
• Salt — ⅓ tsp
• Freeze-dried strawberries, finely ground — 20 g
• Pink gel food coloring — ⅔ tsp (up to 1 tsp for a brighter color)

For rolling:
• Granulated sugar — 20–30 g

For decoration (optional):
• White chocolate, melted
• Freeze-dried or dried strawberries

👩‍🍳 Instructions
1. In a large bowl, combine flour, ground freeze-dried strawberries, sugar, and salt.
2. Add cold butter cubes and rub into the dry ingredients with your fingers or a pastry cutter until the mixture resembles fine crumbs.
3. Add the egg, vanilla extract, and pink food coloring.
4. Mix just until a soft, uniform dough forms — do not overwork.
5. Scoop small portions of dough and roll into balls.
6. Freeze the cookie dough balls for 20–30 minutes before baking.
7. Preheat oven to 180°C / 350°F and line a baking sheet with parchment paper.
8. Roll each dough ball generously in granulated sugar.
9. Place on the baking sheet, leaving space between cookies.
10. Bake for 10–12 minutes, until the edges are set and the tops look slightly crackled.
11. Let cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.


Decoration (optional)
1. Drizzle the cooled cookies with melted white chocolate.
2. Finish with pieces of freeze-dried or dried strawberries.
3. Let the chocolate set before serving.
