Once summer is here, our garden is filled with tender zucchini or squash blossoms.
Have you ever wondered how to use them in your kitchen? Well, here is a wonderful and
quick Italian recipe: we stuff the flowers with water buffalo ricotta (sheep or cow ricotta are fine too) mixed with chopped anchovies fillet or, if anchovies taste is too intense for you, using chopped black olives instead is a good option; fresh basil and salt and pepper to taste. To batter the flowers use a mix of 1/2 cup flour and cold beer or mineral water. In the meantime preheat sunflower oil at 340 F (170 C) and deep fry the stuffed and battered flowers till golden brown. Enjoy this fresh and delicious dish with your favorite dipping sauce or as they are.
