On this episode of Chaser, I am going to show you how to make Oleo-Saccharum and the best grapefruit soda I’ve ever had. Oleo-Saccharum is an awesome ingredient to have, and one that’s not quite like anything else behind the bar. Oleo-Saccharum Ingredients:
5 Grapefruit Peels
10 oz Granulated Sugar
Combine and Let Sit 24 Hours
Transfer to Sauce Pan and Add:
1 Cup of Water
1 Cup of Sugar
Simmer
Strain and Bottle
Grapefruit Soda Ingredients:
1 Part Grapefruit Oleo-Saccharum
1 Part Seltzer
Stir
