Eech is a traditional Armenian dish that is made with bulgur wheat, tomatoes, onions, parsley, and olive oil. It is a salad or spread that can be eaten either at room temperature or warm.
Easy and simple Armenian Eech / Eetch Recipe.
This is a healthy recipe that can be enjoyed hot or cold. I tried the left-over mixed with scrabbled egg which was excellent as well.
Ingredients:
Prep:
1 large onion or 1 cup onion
1 red or green pepper or 1 cup diced pepper
3 large tomato or 8oz tomato sauce
Prep garnish:
1/3 cup chopped parsley
1 bunch green onion
Others:
2 table spoon olive oil
2 tsp salt
1 tsp black pepper
2 tablespoon tomato paste
1 lemon
1 tsp paprika
1 cup bulgur
1 cup water
