Ingredients:
2 - 3 Tbsp EVOO
1 C. carrots
1 C. celery
1 C. onion
6 gloves of garlic
2 15 oz. cans cannellini (white kidney beans) undrained
2 heaping Tsp. of chicken base or use chicken or vegetable broth
1 Tsp Italian seasoning
1 Tsp garlic powder
1 Tsp onion powder
¼ Tsp of crushed red chili flakes
Tomato sauce or tomato paste (I use tomato paste)
8 to 10 oz. of Ditalini or barrel pasta (if using more pasta? Adjust your other ingredients
by adding more)
4 - 6 cooked Italian sausage (optional)
Parsley
Parmesan cheese (a good amount) to taste
Salt & Pepper to taste
Instructions:
Have your pasta water ready. Add your EVOO to a large pot/pan 0n med-high heat and
sauté your onions 3-4 minutes, add your celery and sauté for 3 minutes, then add your
carrots for another 3 minutes, add your garlic, stir in and while continuing to cook add
your chicken base, a big squeeze of tomato paste, Italian seasoning, onion & garlic
powder, chili flakes, and cannellini beans (undrained). If using sausage add them now,
give a good mix and simmer for 15 minutes.
While everything is simmering, boil your pasta, don't forget to salt your water, and cook
al dente. Reserve 2 cups of the pasta water and drain most of the water from the pot, but
still leaving pasta and some water in the pot. Bring this to stove, take your mix and add
it to the pasta, mix in, add a generous amount of parmesan cheese, your Italian parsley
and mix it all together. Add more salt & pepper if needed. If too thick or not enough
liquid add some or all of the remaining pasta water. Let rest before serving. Serve with
buttered Italian bread & a good salad. bon appetit...It's even better the next day
