Hello everyone! I'm Ryusei. Today, I introduced how to make miso udon(Houto). This udon is quite similar to Houto, but I was not able to get the ingredients from Yamanashi prefecture. That's why, I can't say it's "Houto". However, Yamanashi prefecture is close to Tokyo, so in the near future, I'll go there.
But, the taste of this soup is really good and I recommend to cut the dough into a bit thick slices. I hope you'll enjoy miso udon!
Recipe
~Soup ~
Dashi 1200 grams
Miso 60 grams
Soy sauce 10 grams
Mirin 10 grams
~udon~
Cake flour 160 grams
Strong flour 40 grams
Water 90 grams
