Yogurt rice or Curd Rice is a dish originating from India. The word "curd" in Indian English refers to unsweetened plain yogurt. It is most popular in the South Indian states of Tamil Nadu, Kerala, Karnataka, Telangana and Andhra Pradesh; and also in West Indian states of Rajasthan, Gujarat and Maharashtra. Here, instead of plain Curd, Green Chutney is used to flavour the Curd. It is tempered & topped with some fresh Pomegranate & Boondi (Boondi is an Indian snack made from fried chickpea flour).
Ingredient
To cook the Rice:
Basmati Rice / Any kind of White Rice - 1 cup
Water - 2 cup
For Green Yogurt Rice/ Curd Rice:
Cooked Rice - 3 cup
Yogurt - 1.5 cup
Green Chutney - 3/4 cup
Salt - 2 teaspoon
Pomegranate - 1/2 cup
Milk - 1/2 cup
Sugar - 1/2 teaspoon
For Tempering:
Oil - 1/2 tablespoon
Mustard Seed - 1/4 teaspoon
Urad Dal/ Black Gram - 1/2 teaspoon
Cashew - 5 to 10
Red Chilli - 3
Curry leaves - 5
Asafoetida/ Hing - 1/4 teaspoon
To serve:
Green Yogurt Rice - prepared
Pomegranate - handful
Boondi - handful
One can adjust the Green Chutney as per one's preference. Please make sure to adjust the consistency, by adding Milk, as per one's preference. Generally, Curd Rice has a porridge consistency.
