Any south Indian lunch is incomplete without a pickle. And if its a spicy homemade konkani pickle then bingo. 😊
Averrhoa Bilimbi is small green tangy fruit found commonly in the backyards of almost every home. Its known as bimbul or bimbal in konkani.
Bimbul is a souring agent in most curries in place of tamarind. Today, I'm sharing my mothers in-law's bimbul nonche (pickle) recipe.
1. Bilimbi - 1.5 cups
2. Dried Redchillies - 1. 5 cups
3. Rock salt - 1/2 cup
4.Mustard - 1 fist full
5. Asafoetida - one big chick pea size
6. Water - 3 cups
Note -
1. you can store this for 3-4 days at room temperature. Then on refrigeration it lasts upto almost 2 months.
2. The boiling of salt water is a compulsory step, inorder to increase its shelf life. Also, use boiled water (drinking water) inorder to dilute the pickle.
3. Use of tender bimbuls makes it crunchy.
