Ingredients: makes 30 enchiladas
20 New Mexico or guajillo chile pods
2 Chile anchos
4 garlic cloves
1 1/2 tbsp Maseca (instant corn masa)
1 tsp oregano
1/4 tsp cumin seeds or 1/2 tsp ground cumin
Salt or chicken bouillon to taste
30 corn tortillas
Finely shredded queso Oaxaca
Grated onion
Queso fresco
1 serving of love 💕
