Sinaing Na Tulingan/Mackarel Recipe (Braised Pacific Mackarel)

Sinaing Na Mackarel is a filipino dish which is similar to an adobo but instead of pork or chicken, it is made with fish. For this recipe, we used a pressure cooker for faster cooking but you can also use a regular pot.
Ingredients:
3 to 4 lbs of Mackarel
2 Medium-sized slices of Pork Belly (enough to cover the bottom of the pot)
1 Pack of Dried Kamias/Tree Cucumber (Optional)
1 Pack of Fresh or Frozen Kamias/Tree Cucumber (You can buy them at any asian markets in the frozen section)
1/4 Cup Sliced Ginger
5 Cloves Sliced Garlic
4 to 5 Bay Leaves
1 Tablespoon Whole Peppercorn
1/2 Tablespoon Salt
1/4 Cup Vinegar
1/4 Cup Soy Sauce
3 Cups Water
*** Save half of the kamias, ginger, garlic, bay leaves, peppercorn, and salt. You will be adding them on top of the fishes.
